Shakshuka – Eggs Poached in Sauce

Shakshuka is a classic Middle Eastern breakfast dish that will satisfy your family’s taste buds with its bold flavours subtly offset by the poached eggs. It is filling and nourishing and provides a healthy protein-rich start to the morning.

Ingredients
  • 6 large eggs
  • 2 tablespoons olive oil
  • 1 red/green/yellow bell pepper, seeded and diced
  • 2 medium onions, diced
  • 1 teaspoon paprika
  • 2 teaspoons cumin
  • 4-6 garlic cloves (finely chopped)
  • 1/4 teaspoon chilli powder
  • 1 can of whole-peeled tomatoes
  • Salt and black pepper (to taste)
  • 1 cup fresh cilantro (washed and chopped)
  • 1 cup fresh parsley (washed and chopped)
Instructions
  1. Step 1

    Heat olive oil in a large pan on medium heat. Make sure there is no water in the pan when you add oil. Add garlic and sauté till medium brown.

  2. Step 2

    Add chopped bell pepper and onion and cook for 10 minutes on medium flame till the onion becomes translucent.

  3. Step 3

    Add paprika, cumin, chilli powder and black pepper.

  4. Step 4

    Pour all contents of the can of tomatoes into the pan and mash them. Add salt, to taste, and cook on medium flame for 5-7 minutes.

  5. Step 5

    Use a spoon to create spaces for the 6 eggs and then break them. Cover the pan and cook for 5 minutes.

  6. Step 6

    Add chopped cilantro and parsley. Add more black pepper, if required.
